Mixed Grain Pilaf

Ingredients  

 

  • 1/2 cup einkorn

  • 1/2 cup wheat

  • 1/2 cup spelt

  • 1/2 cup rye

  • 1/2 cup oats

  • 2 carrots

  • 1 red bell pepper

  • 2 cups spinach

  • 200 g tofu or tempeh

  • 1/4 cup freshly squeezed orange juice

  • 1 tbsp lemon juice)

  • 1 tsp turmeric, fresh or powder

  • 1 tsp finely chopped fresh rosemary or thyme

  • 1 tsp tahini (sesame paste)

  • 1/2 tsp tamari (optional)

  • 1/4 avocado

  • 1/4 cup water (add more for a thinner texture)

Preparation method

 

  1. Cooking grains. Rinse the grain mix well and place in a pan or Instant Pot. Add twice as much water as grains.

  2. Cutting the vegetables. Cut the carrots and red bell pepper into small cubes. Cut the spinach into fine strips. Cut the tofu or tempeh into bite-sized pieces.

  3. Make the dressing. Add all ingredients to a tall measuring cup. Mix with an immersion blender until a smooth, slightly creamy sauce is formed. The combination of citrus and herbs provides a fresh kick that contrasts beautifully with the earthy grain mix.

  4. Sautéing vegetables. Heat a frying pan over medium heat. Sauté the vegetables and tofu/tempeh in a small amount of water. Do not cook for too long so that the vegetables remain crispy. Add water occasionally to prevent burning.

  5. Assembly. Mix the cooked grains, sautéed vegetables, and spinach in a large bowl. Add the dressing and mix well.
