Preparation method

  1. Cook grains. Rinse the grain mix well and place it in a saucepan or Instant Pot. Add twice as much water as the grains.

  2. Chop the vegetables. Dice the carrots and red bell pepper. Finely chop the spinach. Cut the tofu or tempeh into bite-sized pieces.

  3. Make the dressing. Add all the ingredients to a tall measuring cup. Blend with an immersion blender until smooth and slightly creamy. The combination of citrus and herbs adds a refreshing kick that contrasts beautifully with the earthy grain mix.

  4. Sauté vegetables. Heat a skillet over medium heat. Sauté the vegetables and tofu/tempeh in a small amount of water. Don't overcook the vegetables to ensure they stay crispy. Add a little water regularly to prevent burning.

  5. Assemble. Combine the cooked grains, sautéed vegetables, and spinach in a large bowl. Add the dressing and toss well.
