Mixed Grain Pilaf
± 30 min
Ingredients
-
1/2 cup einkorn
-
1/2 cup wheat
-
1/2 cup spelt
-
1/2 cup rye
-
1/2 cup oats
-
2 carrots
-
1 red bell pepper
-
2 cups spinach
-
200 g tofu or tempeh
-
1/4 cup orange juice, freshly squeezed
-
1 tbsp lemon juice)
-
1 tsp turmeric fresh or powder
-
1 tsp finely chopped fresh rosemary or thyme
-
1 tsp tahini (sesame paste)
-
1/2 tsp tamari (optional)
-
1/4 avocado
-
1/4 cup water (add more for a thinner texture)

Preparation method
-
Cook grains. Rinse the grain mix well and place it in a saucepan or Instant Pot. Add twice as much water as the grains.
-
Chop the vegetables. Dice the carrots and red bell pepper. Finely chop the spinach. Cut the tofu or tempeh into bite-sized pieces.
-
Make the dressing. Add all the ingredients to a tall measuring cup. Blend with an immersion blender until smooth and slightly creamy. The combination of citrus and herbs adds a refreshing kick that contrasts beautifully with the earthy grain mix.
-
Sauté vegetables. Heat a skillet over medium heat. Sauté the vegetables and tofu/tempeh in a small amount of water. Don't overcook the vegetables to ensure they stay crispy. Add a little water regularly to prevent burning.
-
Assemble. Combine the cooked grains, sautéed vegetables, and spinach in a large bowl. Add the dressing and toss well.
