4 tbsp nutritional yeast

4 tbsp nutritional yeast

1 tbsp miso paste

2 tsp onion powder

1 tsp garlic powder

1 tbsp dried mushrooms (ground)

1/2 tsp thyme

1/2 tsp marjoram

1 tsp ground celery

tl LoSalt with iodine

1/2 sheet of nori - finely ground in an electric coffee grinder

1/2 tsp curry powder

1/2 tsp mace
-
1/4 tsp tobacco powder

1/4 tsp dried lovage (optional)

1/4 tsp lemon zest (optional)

Preparation method

Preparing the herb base. Tear the nori sheet into small pieces and place them together with the celery seeds in an electric coffee grinder. Grind to a fine powder—the base of your umami magic.

Mix into a paste. Add the nori powder along with the other ingredients to a small blender, such as a Magic Bullet, or use a compact food processor. Blend until a firm, fragrant paste forms. Pause occasionally to scrape the sides clean if necessary. The mixture should be thick and pliable.

Freezing Roll the mixture into small balls or divide into portions using an ice cube tray. Store the balls or cubes in an airtight container. They will keep for months!
